The most popular hawker delicacy in Penang, for the islanders
and those visiting, has to be fried Koay Teow. It is a fried mixture of Koay
Teow (rice fettuccine), chilli paste, bean sprouts, shrimps, cockles, Chinese
dried sausages, chives, grated garlic and most importantly, pork fat. All these
ingredients are stir-fried in a wok with hot air blower beneath to boost the
combustion from the charcoal fire. It is usually presented in a plate laid with
a banana leaf. The steaming hot fried Koay Teow plus the fragrance from the
banana leaf released by the heat, will certainly water one's mouth.
